Have you tried mounting the DVD, and your existing bootable USB stick, and then from Disk Utility, performing a Restore from the USB device to your DVD? I haven't tried this myself on High Sierra, but the principle is the same as it was in the past for older OS X releases. Several other methods are also suggested on github, but these don't work either yet to make a bootable dvd or bluray for High Sierra (including the one posted there today, which although gives a bootable iso, it doesn’t boot a dvd - for computers formatted as apfs - although it did boot for computers formatted as hfs+).
